Chicken with Shrub Gastrique

So easy and quick roasted-glazed meal.


1 chicken, butterflied
2 tablespoons olive oil
2 tablespoons chopped shallot
1/4 cup maple syrup
1/4 cup Apple Coriander Maple Shrub
chopped parsley
salt and pepper

Pound the chicken breast, season with salt and pepper. Heat a non-stick or cast iron skillet on medium. Add 1 tablespoon olive oil. When hot but not smoking place the chicken breast and cook for 3 -5 minutes on each side, until browned and cooked through. Remove the chicken, cover to keep warm. Pour another tablespoon of olive oil into the pan. Sauté shallot and cook for 1-2 minutes until soft and colored, scraping the pan. Add white wine and cook for another minute. Add the shrub and cook for about 1 - 2 minutes until slightly reduced to a sauce consistency. Taste for seasoning. Plate the chicken and pour sauce over. Sprinkle with parsley and serve.
