Shrub Cherries

A delightful, easy condiment to make for cocktails and food alike


  • 3/4 cup water
  • 3/4 cup apple cider vinegar
  • 1/4 cup sugar
  • 2 tsp. peppercorns
  • 1/2 tsp. crushed red chili flakes
  • 1 lbs. fresh or frozen (thawed) cherries
  • 1 large rosemary sprig

In a saucepan, bring first 5 ingredients to a boil until sugar dissolves. Turn off heat and let steep for 15 minutes. Strain into a bowl, return liquid to saucepan. Add cherries and rosemary. Simmer for 10 minutes. Allow contents to cool for several minutes, then transfer to a mason jar. Add shrub cherries to enliven your favorite cocktail!
